BRISCA’s Koroneiki + Arbosana coupage is made for finishing: the final pour that adds freshness, aroma, and character just before a dish reaches the table.

A Bright Finishing Oil for the Final Drizzle

Koroneiki brings vibrant green fruit, fresh herbs, and a distinctive peppery finish. Arbosana rounds the blend with balanced fruitiness, gentle bitterness, and notes of green tomato and almond. Together, they create a bright, expressive extra virgin olive oil that brings simple food to life.

Drizzle it over ripe tomatoes, soups, grilled fish, roasted vegetables, salads, burrata, warm bread, or even vanilla ice cream. For the best experience, add it after cooking and pour generously.

Made with early-harvest olives grown on a single estate in Ciudad Real, Spain. The olives are milled the same day they are harvested and extracted at low temperatures to preserve their freshness, flavor, and naturally occurring polyphenols.

The 350 ml coated-glass bottle protects the oil from light and is designed to be refilled from our 1 L tin.

Frequently asked questions

You asked, we answered
  • BRISCA olive oil stands apart through our commitment to exceptional freshness and flavor. Our olives are harvested and milled on the same day in Spain's La Mancha region, preserving the vibrant flavors and beneficial compounds that are often lost in mass-produced oils. We use unique coupage combinations and low-temperature extraction to create distinctive flavor profiles you won't find elsewhere. Our sustainable production process is also zero-waste, with olive pits powering our facilities and pulp converted to biofuel.

  • Our Picual & Arbequina coupage, with its herbal notes, green apple, almond, and tomato undertones, is perfect for everyday cooking. Use it for sautéing, roasting, and traditional Spanish dishes like tortilla española or pan con tomate.

Our Koroneiki & Arbosana coupage, featuring green banana and fresh grass notes with a peppery finish, shines as a finishing oil. Drizzle it over completed dishes, use for dipping bread, or add to salad dressings where its distinctive flavor can take center stage.

  • For optimal freshness, store your BRISCA olive oil in a cool, dark place away from heat sources and direct sunlight. Contrary to popular belief, refrigeration isn't necessary and can actually cause the oil to become cloudy (though this doesn't affect quality). Always keep the bottle tightly sealed when not in use. When stored properly, BRISCA will maintain its exceptional flavor for up to 18 months from the harvest date printed on your bottle.

  • "Same-day milled" means our olives go from tree to mill within hours of harvesting, not days or weeks later as with many commercial oils. This immediate processing is crucial because olives begin to oxidize as soon as they're picked. By milling immediately, we capture the freshest flavors, highest nutrient content, and lowest acidity levels possible. The result is a noticeably fresher, more vibrant olive oil with all of its beneficial properties intact.

  • Sobremesa is a beloved Spanish tradition that refers to the time spent lingering at the table after a meal, enjoying conversation and company. Our name "BRISCA" comes from a popular card game often played during sobremesa. This tradition represents what we value most: quality ingredients bringing people together for unhurried moments of connection. Each bottle of BRISCA isn't just olive oil—it's an invitation to create your own sobremesa moments with those you care about.

  • While BRISCA follows many traditional and sustainable farming practices, we are currently in the process of pursuing organic certification. Our producers use minimal interventions in the olive groves and focus on maintaining the natural balance of the ecosystem. Our zero-waste production process reflects our commitment to environmental stewardship, with olive pits powering our facilities and pulp converted to biofuel.

  • Currently, BRISCA ships throughout the continental United States. We're focused on ensuring perfect delivery conditions for our premium olive oil within the US market. International shipping may be available in the future as we expand. Sign up for our newsletter to be the first to know when we begin serving additional countries.

  • A coupage is a carefully crafted blend of different olive varieties, each selected to contribute specific flavor characteristics to the final oil. Unlike single-variety oils, coupages offer more complex and balanced flavor profiles by combining the best qualities of each olive type.

BRISCA offers two distinct coupages to enhance different culinary experiences:

Our Picual & Arbequina coupage combines Spain's most widely planted variety (Picual) known for its robust character with the softer, fruitier Arbequina olive. This creates a versatile oil with the perfect balance of intensity and smoothness.

Our Koroneiki & Arbosana coupage pairs the Greek Koroneiki olive (which thrives in Spanish soil) known for its complex intensity with the Spanish Arbosana variety that contributes balanced fruitiness and subtle bitterness.

By offering these thoughtfully created coupages rather than single-variety oils, we provide you with olive oils specifically designed for different culinary uses, from everyday cooking to finishing dishes where the oil's flavor is showcased.
