Tzatziki

Prepare the cucumber: Grate the cucumber, then use a clean towel or cheesecloth to squeeze out as much water as possible. This step keeps your tzatziki thick and not watery.

Mix the base: In a medium bowl, combine Greek yogurt, minced garlic, lemon juice, and BRISCA olive oil, for this one we used our Koroneiki and Arbosana variety. Stir until smooth.

Add flavor: Fold in the grated cucumber and chopped dill. Season with sea salt to taste.

Chill and serve: Cover and refrigerate for at least 30 minutes before serving so the flavors can meld.
