Our Picual & Arbequina coupage, with its herbal notes, green apple, almond, and tomato undertones, is perfect for everyday cooking. Use it for sautéing, roasting, and traditional Spanish dishes like tortilla española or pan con tomate.

Our Koroneiki & Arbosana coupage, featuring green banana and fresh grass notes with a peppery finish, shines as a finishing oil. Drizzle it over completed dishes, use for dipping bread, or add to salad dressings where its distinctive flavor can take center stage.

For optimal freshness, store your BRISCA olive oil in a cool, dark place away from heat sources and direct sunlight. Contrary to popular belief, refrigeration isn't necessary and can actually cause the oil to become cloudy (though this doesn't affect quality). Always keep the bottle tightly sealed when not in use. When stored properly, BRISCA will maintain its exceptional flavor for up to 18 months from the harvest date printed on your bottle.

"Same-day milled" means our olives go from tree to mill within hours of harvesting, not days or weeks later as with many commercial oils. This immediate processing is crucial because olives begin to oxidize as soon as they're picked. By milling immediately, we capture the freshest flavors, highest nutrient content, and lowest acidity levels possible. The result is a noticeably fresher, more vibrant olive oil with all of its beneficial properties intact.

Sobremesa is a beloved Spanish tradition that refers to the time spent lingering at the table after a meal, enjoying conversation and company. Our name "BRISCA" comes from a popular card game often played during sobremesa.
